Shabu Shabu is the Japanese cousin of the Chinese hot pot; it was named after the 'swish' sound made by submerging the meat in the broth. Shabu Shabu consists of a broth (with kelp, cabbage, mushrooms and other ingredients), thinly sliced meat (pork in our case), ponzu sauce (a citrus based sauce) and gomu (sesame seed) sauce, (to dip the cooked meat in) as well as steaming hot white rice!
