I made this the other day - very delicious. I didn't simmer on a low heat, so it reduced the sauce by half, so I removed the meat, added the potatoes, made more stock, 500 mls worth and poured it ontop the potatoes and sauce, then re-added the meat which had fallen off the bone anyhow, the fat had reduced too. Then I simmered on a low heat for about 20-25mins. Worth the wait. Still got some, am hungry and will eat some in a mo!
